TOFU CACCIATORE |
2 Pounds Firm Low Fat Tofu,

2 Teaspoons Dried Basil

On a baking sheet arrange the tofu in a single layer. Cover with parchment paper or plastic wrap. Set a second baking sheet on top. Place weights on top to hold down. Let stand for 15 minutes. Preheat oven to 350°. Coat a large skillet with cooking spray, place on medium heat. Add onions and peppers and cook stirring often. 5-8 minutes. Add garlic, basil, oregano and stir for 15 seconds. Add the tomatoes and tomato paste. Mix well and cook to a boil. Then let simmer for 15 minutes. Dredge the tofu slices in the flour. Add to another skillet in batches sprayed with cooking spray and cook until lightly browned about 3 minutes per side. Transfer to a baking dish. Pour the tomato sauce over all. Bake for 45 minutes to 1 1/2 hour. |
