ZUCCHINI TACOS

1 Garlic Clove, minced
1 Tablespoon Cumin Seeds
1 1/2 Cups Mushrooms, sliced
1 Medium Zucchini, grated (2 Cups)
1 Tomato, seeded & chopped

1/2 Cup Fresh Cilantro,
chopped
1/2 Cup Feta Cheese, crumbled
1 Cup Salsa
8 Fat Free Corn Tortilla's,
warmed

Spray a large non-stick pan with cooking spray over medium heat. Add the first 2 ingredients and sauté for 1 minute. Add the mushrooms and cook for 2 minutes. Add the next three ingredients and continue cooking until warmed through. Place 1/4-cup mixture on to each tortilla shell. Add 1 Tablespoon of cheese and 2 tablespoons salsa. Roll up and serve.
