BLACK BEAN TACOS

2 Teaspoons Olive Oil
¾ Cup Onion, chopped
½ Teaspoon Dried Oregano
2 Garlic Cloves, minced
1 Jalapeno Pepper, seeded and
minced
1 Tablespoon Sherry
1 Tablespoon Reduce Sodium
Soy Sauce

15 Ounces Black Beans,
rinsed & drained
8 Ounces Wheat Gluten, chopped fine
½ Teaspoon Pepper
12 Taco Shells
2 Cups Romaine Lettuce, shredded
1 Avocado, chopped
Hot Sauce

Heat oil in a pan over medium heat. Add the next 4 ingredients and sauté for 1 minute. Stir in the next 5 ingredients and cook 7 minutes. Spoon ½ cup mixture into each taco shell. Serve with the avocado and salsa.
