SESAME QUINOA WITH TOFU |
8 Ounces Firm Tofu, drained

1 1/2 Cups Vegetable Stock or Water
|
Place tofu on several layers of paper towels. Let stand 20 minutes. Cut into 1/2" cubes. Heat oil in a medium pan over medium heat. Add tofu and seeds and sauté for 3 minutes. Remove from pan. Add quinoa and cook 3 minutes stirring frequetly. Add stock and bring to a boil. Cover reduce heat and simmer 20 minutes. Place in a large bowl. Add tofu mixture and remaining ingredients, toss. Serve. |
