Southwestern Potato Hash

1 (14.5 OZ) Can New Potatoes,
drained and diced
1 (14.5 OZ) Can Tomatoes,
diced
1 (15 OZ) Can Black Beans,
drained & rinsed

1/2 Cup Firm Tofu, diced
1 Teaspoon Dried Oregano
1/2 Cup Reduced Fat Mexican
Blend Cheese, shredded

Preheat broiler. Place the first 5 ingredients in a pan over medium heat. Simmer 5 minutes, until potatoes are tender. Sprinkle the cheese on top. Place pan in broiler for 1 minute, until cheese melts. Serve.
