Southwestern Potato Hash |
1 (14.5 OZ) Can New Potatoes,

1/2 Cup Firm Tofu, diced

Preheat broiler. Place the first 5 ingredients in a pan over medium heat. Simmer 5 minutes, until potatoes are tender. Sprinkle the cheese on top. Place pan in broiler for 1 minute, until cheese melts. Serve. |
