STIR FRY TOFU & PEAS

1 Tablespoon Fresh Ginger,
peeled and sliced
1 Teaspoon Cornstarch
1 Tablespoon Olive Oil
2 Cups Shiitake Mushrooms,
sliced thin
1 Cup Snow Peas, trimmed

1/2 Teaspoon Bird Chile,
minced Or use Serrano Chile
1 (12.3 OZ) Package Tofu,
drained, cut into 1" cubes
1/2 Cup Green Onions, sliced
3 Tablespoons Low Sodium Soy Sauce

Rinse ginger with water and combine with cornstarch in a bowl. Heat a wok with the oil.Add mushrooms and stir-fry until tender. About 2 minutes. Add the gainer mixture and the remaining ingredients. Stir-fry about 5 minutes. Serve.
