RED CURRIED TOFU

1 Cup White Rice, uncooked
2 Tablespoons Dark Sesame Oil
2 1/2 Cups Red Onion, sliced
1 Cup Yellow Pepper, cut in strips
1 1/2 Teaspoons Curry Powder
1/2 Cup Green Onions, chopped
1 Teaspoon Ground Coriander
1/2 Teaspoon Ground Turmeric

1 Tablespoon Low Sodium
Soy Sauce
1 Tablespoon Honey
1/2 Teaspoon Chile Paste
with Garlic
1 (14.5 Oz) Can Diced
Tomatoes
1 (12.3 oz) Package Reduced
Fat Tofu, cubed
1/4 Cup Fresh Cilantro, minced
1/4 Cup Cashews, chopped

Prepare rice per directions on package. Heat oil in a non-stick pan. Add onion and pepperand sauté 4 minutes. Stir in the next 4 ingredients. Cook 2 minutes. Add soy sauce and the next 4 ingredients. Bring to a boil and simmer 2 minutes. Serve over the rice and sprinkle with the cilantro and cashews.
