CHICKPEA & BASIL SAUTE

1 Tablespoon Olive Oil
2 Cups Onions, sliced
1/2 Teaspoon Cumin Seeds
1 Cup Red Pepper, cut in strips
1 Tablespoon Water

1/2 Cup Green Onions, chopped
2 (15 OZ) Cans Chickpeas, drained
2 Cups Fresh Basil, chopped
1/4 Cup Garlic and Herb Seasoned
Bread Crumbs
2 Cups Hot Cooked Brown Rice

Heat oil in a non-stick pan. Add onion and cumin. Sauté 10 minutes. Add pepper and water, cover and reduce heat. Simmer 2 minutes. Add next 3 ingredients and simmer 2 minutes. Remove from heat and add the basil. Sprinkle with the breadcrumbs. Serve over the rice.
