10 Ounce Package Frozen Lima Beans

1 Garlic Clove, minced

Cook lima beans according to package, drain and cool. In a medium saucepan, bring 3cups water to boil. Add barley and cook for 8 to 10 minutes. Drain and rinse under coldwater. Place in a medium bowl. Add lima beans and red pepper. In a small bowl combine tomato juice and remaining ingredients. Mix well and pour over the barley mixture. Toss to blend. Serve. |
