SOUTHWESTERN BARLEY

10 Ounce Package Frozen Lima Beans
1 Cup Quick Cooking Barley
1/3 Cup Tomato Juice
3 Tablespoons Lime Juice
2 Tablespoons Olive Oil

1 Garlic Clove, minced
1 Teaspoon Ground Cumin
1 Teaspoon Dried Oregano
1/2 Teaspoon Hot Pepper Sauce

Cook lima beans according to package, drain and cool. In a medium saucepan, bring 3cups water to boil. Add barley and cook for 8 to 10 minutes. Drain and rinse under coldwater. Place in a medium bowl. Add lima beans and red pepper. In a small bowl combine tomato juice and remaining ingredients. Mix well and pour over the barley mixture. Toss to blend. Serve.
