ENDIVE & APPLE SALAD

2 Tablespoons Shallots,
minced
2 Tablespoons White Wine
Vinegar
2 Tablespoons Red Wine
Vinegar
1/2 Teaspoon Pepper
1 Tablespoon Olive Oil

1 Tablespoon Walnut Oil
or Olive Oil
4 Cups Apples, sliced
3 Heads Endive, halved
and sliced
2 Tablespoons Fresh Parsley,
chopped

Combine first 4 ingredients, add oils and mix well. Cover and chill. Combine remaining ingredients in another bowl. Toss with the first mixture and serve.
