TOFU WITH RED CURRY SAUCE

1 (14 OZ) Package Firm Tofu,
drainedand cut into cubes
2 Tablespoons Lime Juice
1 Teaspoon Turmeric
1/8 Teaspoon Pepper
2 Teaspoons Olive Oil

2 Cups Onion, sliced
1 Cup Light Coconut Milk
2 Tablespoons Curry Paste
1 Cup Fresh peas, shelled
1/2 Cup Yellow Tomato, chopped
4 Cups Cooked Rice

Place tofu in a non-stick pan on medium heat. Cook until liquid is evaporated, about 3 minutes. Remove from pan and sprinkle with the next 3 ingredients. Heat oil in the pan, add the tofu back to the pan and the next 5 ingredients. Simmer for 5 minutes. Serve over the rice.
