HEARTY BARLEY MUSHROOM SOUP

1 Large Onion, chopped
2 Garlic Cloves, minced
1 Carrot, peeled and sliced
1 Red Pepper, chopped
6 Shiitake Mushrooms, cleaned
and sliced
6 Button Mushrooms, sliced

1 Cup Canned Tomatoes, chopped
1/3 Cup Pearl Barley
2 Cups Vegetable Broth
1/2 Teaspoon Thyme
1/2 Teaspoon Rosemary, crumbled

Add all ingredients in to a large pan. Simmer for 45 minutes. Serve.
