HARVEST MINESTRONE

1 Cup Onion, chopped
1 Cup Carrot, sliced
3/4 Cup Celery, sliced
3 Cups Tomato, chopped
2 Cups Butternut Squash,
diced
2 Cups Water
1/4 Teaspoon Pepper
2 (16 OZ) Cans Fat Free
Chicken Broth

1 (16OZ) Can Cannellini Beans,
or other white Beans, drained
2 Cloves Garlic, minced
2 Cups Broccoli or Cauliflower,
chopped
2 Cups Cabbage, sliced
2 Cups Collard Greens or Kale,
chopped
1/2 Cup Seashell Pasta, uncooked
2 Teaspoons Sage
2 Teaspoons Thyme

Add all ingredients into a large pot. Simmer on low for 20 minutes, or until vegetables are tender.
