MEDITERRANEAN SEAFOOD CHOWDER

1 1/2 Cups Yellow or Red
Peppers, chopped
1 Onion, chopped
3 Garlic cloves, minced
1 Can (28 OZ) Crushed Tomatoes
2 1/4 Cups Water
1 Can (14.5 OZ) Chicken Broth
1 Cup Long Grain Rice, uncooked

1/2 Cup White Wine
1/2 Teaspoon Thyme
1/2 Teaspoon Basil
1/8 Teaspoon Red Pepper Flakes,
crushed
8 Ounces Uncooked Shrimp,
peeled & de-veined
8 Ounces Cod Fillets,
cut into pieces

In a large pan, add the first 10 ingredients. Simmer for 20 minutes until rice is tender. Add the remaining 2 ingredients and simmer another 5 minutes until fish is cooked through. Serve.
