BLACK BEAN SOUP

1 Pound Black beans,
sorted, soaked, and rinsed
9 Cups Water
2 Green peppers, chopped
6 Garlic Cloves, minced
1 Clove
1 Bay Leaf
2 Onions, chopped
2 Stalks Celery, chopped

2 Ounces Canadian Bacon,
chopped
1/2 Cup White Wine
1 Tablespoon Red Wine Vinegar
1 Teaspoon Cumin, ground
1 Teaspoon Dried Oregano
Pepper to Taste
1/4 Cup Fat Free Sour Cream
1/4 Cup Green Onions, chopped

Combine beans and water and let soak over night. Place the pan on the stove and add the next 12 ingredients. Simmer for 1 hour or until the beans are tender. Serve with the sour cream and onions.
