POTATO AND SWISS CHOWDER |

2 Bay Leaves

Heat a dutch oven coated with cooking spray. Add leeks and garlic and sauté for 2 minutes. Stir in the potatoes and next 4 ingredients. Bring to a boil, cover and reduce heat. Simmer 20 minutes. Place 1/2 the mixture into a blender. Process until smooth. Return to the pan. Stir in the remaining ingredients, except the parsley. Cook until the cheese melts. Sprinkle with the parsley. Serve. |
