POTATO AND SWISS CHOWDER

Cooking Spray
2 Cups Leeks, thinly sliced
2 Garlic Cloves, minced
4 Cups Potatoes, cubed
1 Cup Carrots, cubed
1 Cup Yellow Squash, cubed
2 (15.75 Oz) Cans Fat Free
Chicken Broth

2 Bay Leaves
1 Cup Cooked Wild Rice
1 Cup Half & Half
1/2 Cup Swiss Cheese,
shredded
1/4 Teaspoon Pepper
Parsley, chopped

Heat a dutch oven coated with cooking spray. Add leeks and garlic and sauté for 2 minutes. Stir in the potatoes and next 4 ingredients. Bring to a boil, cover and reduce heat. Simmer 20 minutes. Place 1/2 the mixture into a blender. Process until smooth. Return to the pan. Stir in the remaining ingredients, except the parsley. Cook until the cheese melts. Sprinkle with the parsley. Serve.
