Grilled Asparagus and Prosciutto with Lemon Vinaigrette

2 Tablespoons apple cider vinegar
1 Tablespoon Shallot -- finely chopped
1 Teaspoon Dijon mustard
2 Teaspoon Lemon Zest -- grated

1 Tablespoon Olive Oil
1/4 Teaspoon Black Pepper
1 1/2 Pounds asparagus
1 Ounce Prosciutto -- about 2 slices

In a small bowl whisk together the first 6 ingredients.
Remove and discard the tough bottom of the asparagus. Clean. Place in a baggie and marinate for 20 minutes.
Prepare Grill for direct cooking over medium Heat. Grill the Prosciutto 1-2 minutes or until crisp. Let cool.
Grill the Asparagus for 3-4 minutes.
Crumble the Prosciutto over the Asparagus and serve.
