SPAGHETTI SAUCE WITH TOMATOES |
1 Medium Spaghetti Squash

2 Tablespoons Parsley, minced
|
Cut squash lengthwise, discard seeds. Place cut side down in a baking dish. Fill dish with hot water to depth of 1/2 in. Cover and bake at 350° for 30-40 minutes. In a non-stick skillet, heat water over medium heat. Add the next 6 ingredients and simmer 5 minutes. When squash is ready to handle. Scoop out the insides and place in a bowl. Add the tomato mixture and toss to combine. Serve. |
