ONION STRATA WITH GRUYERE

4 Cups Red Onion, chopped
1 Cup Prosciutto or Ham,
chopped
1/3 Cup Water
2 1/2 Cups Fat Free Milk
1/4 Teaspoon Dry Mustard

1/8 Teaspoon Pepper
1 (8 OZ) Carton Egg
Substitute
8 Cups French Bread, cubed
1 Cup Gruyere Cheese, shredded

Heat a non-stick skillet over medium heat. Add onions and prosciutto and sauté 5 minutes. Add water, cover and reduce heat to simmer and cook 30 minutes. Uncover and cook 30 more minutes, or until liquid almost evaporates. Cool. Combine the next 4 ingredients together. Mix until it is well blended. Stir in the onion mixture. Add the bread and toss to coat. Arrange 1/2 the mixture in an 11 x 7” baking dish. Sprinkle with 1/2 the cheese. Then add the remaining bread mixture. Cover and refrigerate for 8 hours. Preheat oven to 350°. Bake for 25 minutes. Cover with the remaining cheese and bake for another 20 minutes. Serve.
