ZUCCHINI SALAD WITH CREAMY BASIL DRESSING |
3-4 Small Zucchinis

Pepper to Taste

Cut the zucchini on the diagonal into thin slices. Measure out 2 1/2 cups and reserve for another use. Mix in a bowl the buttermilk, basil, relish, garlic, and pepper. Set aside. In a large bowl combine the zucchini, bell pepper, snow peas and onion. Add the dressing to coat and toss well. |
