ZUCCHINI SALAD WITH CREAMY BASIL DRESSING

3-4 Small Zucchinis
1/2 Cup Low Fat Buttermilk
1/2 Cup Fresh Basil, chopped
1 Tablespoon Plus 1 Teaspoon
Sweet Pickle Relish
1 Clove Garlic, crushed

Pepper to Taste
1 Red Bell Pepper, sliced
1 1/2 Cups Blanched Snow Peas
1/2 Cup Red Onion, sliced

Cut the zucchini on the diagonal into thin slices. Measure out 2 1/2 cups and reserve for another use. Mix in a bowl the buttermilk, basil, relish, garlic, and pepper. Set aside. In a large bowl combine the zucchini, bell pepper, snow peas and onion. Add the dressing to coat and toss well.
