GREEK SALAD

Dressing:
2 tablespoons olive oil
1 1/2 tablespoons Lemon Juice, Fresh
1 tablespoon red wine vinegar
2 each garlic cloves, minced
1 teaspoon dried oregano
1 Teaspoon Dijon Mustard

Salad:
1 head lettuce, torn into bite-size
3 large plum tomatoes, seeded and coarsely
1 Each Cucumber, peeled and coarsely chopped
1 medium red onion, cut into thin rings
1 small green pepper, cut into thin rings
12 Each kalamata olives
3/4 cup Athenos Reduced Fat Feta Cheese

Whisk dressing ingredients together until blended. Combine all salad ingredients, except cheese, in large bowl. Toss with dressing. Sprinkle cheese over and serve.
