NEW POTATO SALAD

1 1/2 Pounds Small Red Potatoes
1/2 Cup Finely Chopped Red Bell Pepper
1/3 Cup Finely Chopped Celery
5 Tablespoons Low Fat Mayonaise

1/4 Cup Chopped Shallots
2 Tablespoons White Wine Vinegar
1 Tablespoon Dijon Mustard
1/2 Teaspoon Pepper

Place Potatoes in a sauce pan with water, cover. Bring to a boil. Reduce heat and simmer 15 minutes. Drain and rinse with cold water. Cool. Cut Potatoes into quarters. Combine the Potaotes with the remaining ingredients. Toss to coat. Serve.
