COBB SALAD WITH GREEN GODDESS DRESSING

SALAD:
4 Slices Turkey Bacon
3 Cups Iceberg Lettuce,
cleaned & chopped
1 Cup Arugula,
cleaned & chopped
8 Ounces Chicken Breast,
cooked and diced
3 Hard Boiled Egg Whites, chopped
½ Avocado, peeled & chopped
4 Tomatoes, seeded & chopped

DRESSING:
½ Cup Plain Yogurt
¼ Cup Non Fat Mayonnaise
½ Cup Chopped Parsley
¼ Cup Chopped Chives
1 Scallion, chopped
1 Teaspoon White Wine Vinegar
¼ Teaspoon Pepper

SALAD: Cook the bacon until crisp, tear into pieces. Scatter the lettuces on a large platter. Top with neat rows of the remaining ingredients. DRESSING: Mix all the ingredients in a blender and pulse until smooth. Serve with the salad.
