PEAR WALNUT AND BLUE CHEESE SALAD

VINAIGETTE:
1/2 Cup Canned Whole Berry
Cranberry Sauce
1/4 Cup Orange Juice
1 Tablespoon Olive Oil
2 Tablespoons Balsamic Vinegar
1 Teaspoon Splenda
1 Teaspoon Minced Ginger

SALAD:
18 Bibb Lettuce leaves (2 Heads)
2 Cups Pears, peeled & sliced
3 Tablespoons Orange Juice
1 Cup Red Onion, sliced in rings
1/3 Cup Crumbled Blue Cheese
2 Tablespoons Walnuts, chopped

VINAIGETTE: Place all ingredients in a bowl, stir with a whisk. SALAD: Divide the lettuce leaves evenly among 6 plates. Toss the pears with the orange juice and divide evenly among the plates. Top each with the remaining ingredients. Drizzle each with 2 1/2 Tablespoons vinaigrette. Serve.
