FIESTA CHOPPED SALAD

1 Each Red Bell Pepper,
chopped
1 Each Yellow Bell Pepper,
chopped
1 Each Green Bell Pepper,
chopped
1 Each Tomato, chopped
1 Each Zucchini, chopped
2 Each Scallion, chopped
1/2 Each Cucumber, chopped

2 Tablespoons Parsley,
freshly chopped
2 Tablespoons Olive Oil
1 Tablespoon Red Wine Vinegar
1/2 Teaspoon Splenda
1 Each Avocado, chopped
Salt and Pepper, to taste

Combine the first 8 ingredients together in a bowl. In another bowl combine the next 3 ingredients in a bowl. Whisk until combined well. Pour over the salad and toss well. Just before serving add the avocado.
