GREEK SALAD WITH CHICKEN

1/4 Cup Fat Free, Sodium
Free Chicken Broth
2 Tablespoon Red Wine Vinegar
1 Teaspoon Sugar
1 Teaspoon Dried Oregano
2 Teaspoons Olive Oil
1/2 Teaspoon Ground Pepper
1 Clove Garlic, minced
4 (4 OZ) Skinless, Boneless
Chicken Breast

Cooking Spray
8 Cups Romaine Lettuce,
torn
1 Cup Cucumber, sliced
8 Pitted Kalamata Olives,
halved
4 Plum Tomatoes, quartered
2 Slices Red Onion,
separated in rings
1/4 Cup Feta Cheese, crumbled

Prepared grill. Combine the first 7 ingredients in a bowl. Brush the chicken with 2 tablespoons of it. Set the rest aside. Place chicken on grill and cook for 5 minutes on each side, until cooked through. Cut into cubes. Combine the lettuce and next 4 ingredients. Add the remaining dressing, Toss. Divide evenly onto 4 plates. Top with the feta cheese. Serve.
