CRUNCHY SHRIMP PASTA SALAD

1/2 Cup Fat Free Cottage
Cheese
1 Tablespoon Lemon Juice
1 Tablespoon Olive Oil
1 Tablespoon Light Mayonnaise
1/4 Teaspoon Pepper
1/8 Teaspoon Hot Sauce
1 1/2 Cups Cooked Shrimp,
chopped

3 Cups Elbow Macaroni, cooked
1 Cup Cauliflower, chopped
1/3 Cup Pimiento Olives, sliced
1/3 Cup Green Pepper, chopped
1/3 Cup Onion, chopped
1 Tablespoon Cilantro, chopped

Place the cottage cheese in a blender, process until smooth. Combine it in a bowl with the next 5 ingredients. Stir well. Add the remaining ingredients. Chill over 1 hour. Serve.
