LEMON CAESAR SALAD

1/2 Teaspoon Lemon Zest,
grated
1 1/2 Tablespoon Fresh Lemon
Juice
1 Large Garlic Clove
1 Teaspoon White Wine
Worcestershire Sauce
1/2 Teaspoon Dijon Mustard
1/2 Teaspoon Anchovy Paste

2 Tablespoon Extra Virgin
Olive Oil
1/4 Cup Plain Fat Free
Yogurt
7 Cups Torn Romaine Lettuce
Leaves
1 (14OZ) Can Artichoke Hearts,
drained and halved
2 OZ Parmesan Cheese, grated
18 Melba Toast Rounds, broken
into pieces

In a blender, puree the first 8 ingredients. Place the lettuce and artichokes in a bowl. Add the dressing and toss to coat. Sprinkle with the cheese and toast pieces.
