MOZZARELLA TOMATO COUSCOUS SALAD

2 Cups Tomato, diced
3/4 Cups Fresh Mozzarella
Cheese, diced
3 Tablespoons Shallots,
minced
2 Teaspoons Olive Oil
1/2 Teaspoon Pepper

1 Garlic Clove, minced
1 1/4 Cups Water
1 Cup Couscous, uncooked
1/4 Cup Fresh Basil

Combine the first 6 ingredients in a bowl, cover and put in the refrigerator for 30 minutes. Bring the water to a boil in a pan and add the couscous. Remove from the heat cover and let stand for 5 minutes. Fluff with a fork. Add the basil and the tomatoes mixture. Mix well. Serve.
