SOUTHERN STIR FRY

Ingredients:
1 cup cold cooked white rice
1 cup frozen whole kernel corn
1 1/2 t. chopped fresh or 1/2 t dried thyme leaves
1/2 t. garlic salt
1/8 t. ground red pepper
1 can (15-16 oz.) black-eyed peas, rinsed and drained
2 cups lightly packed spinach leaves
Cooking Instructions:
1. Spray 12-inch non stick skillet with non stick cooking spray; heat over medium-high heat.
2. Cook all ingredients except spinach in skillet, stirring occasionally, until hot. Stir in spinach. Cook until spinach begins to wilt.
