Gazpacho

Ingredients:
1 46-ounce can tomato or V-8 juice
1 16-ounce can chicken broth
2 tbls salsa
1 or 2 tbls olive oil (I used one=4 points)
2 tablespoons lemon juice
1/2 tsp crushed basil leaves
1/4 tsp cumin
1 tsp sugar
1 each red, yellow, and green peppers
2 medium cucumbers
5 or 6 celery stalks
1 sweet onion or 2 bunches green onions ( including the tops)
2 cups fresh tomatoes (preferably cherry or grape)
4 to 6 avocados (I used one with a weight of 4 ounces)
Cooking Instructions:
Mix all ingredients together in a gallon container and chill. Serve with crackers or chips. makes 12 cups

Serving Suggestions:
Options May also add chopped fresh cilantro (which I did and it was wonderful.) may use a dash of hot sauce or a splash of balsamic vinegar.
