Cheese Veggie Soup

Ingredients:
2 bags of mixed Veggies (California Mix is best)
3 cans Fat Free Chicken Broth
1 can Ro-tel (can use mild or hot)
10 oz Velveeta Light Cheese
Cooking Instructions:
Place first 3 ingredients in a soup pot, and cook until veggies are tender or to your liking. Once the veggies are cooked add the cheese and stir lightly until cheese is melted. If you like a thicker soup, thicken with a mixture of corn starch and and little water. This soup is Wonderful! I guarantee!
