1 Large leek, thinly sliced, white and pale green parts only
1/4 Cup Flour
3 Cups Chicken Stock reduced Sodium

1 Cup Beer
2 teaspoons Dijon Mustard
1 1/3 Cups Shredded Sharp Cheese
Pepper to taste

Melt Butter in a saucepan. Add the remaining ingredients except the cheese simmer for 30 minutes. Remove from heat and stir in the cheese until it melts. Serve
