CREAM OF LEEK & CRAB SOUP

| Ingredients: |
250 gram sliced leeks
Butter flavoured nonfat cooking spray
Water to cover leeks
|
1 can crab meat
1 teaspoon dill
salt and pepper to taste

| Cooking Instructions: |
|
In a medium saucepan saute leeks in cooking
spray until soft (about 3-5 minutes). Add water
to cover leeks, add dill, salt and pepper, bring
to boil, reduce heat and let simmer 15-20 minutes,
using a hand blender, blend soup until desired
thickness, add crab meat and stir.
Serve.
