Orzo and Vegetables

Ingredients:
2 cup cooked orzo
1/2 package frozen mixed vegetables
2 clove garlic clove(s)
1 Tbsp olive oil
1 Tbsp butter
1 small onion(s)
1/4 cup grated Parmesan cheese
1/4 cup spinach
2 cup reduced-sodium chicken broth
1 Tbsp parsley
Cooking Instructions:
Heat oil and butter. Add onions and garlic. Cook until onions are translucent. Add veggies and spinach and cook until no longer frozen. Add Orzo and cook for a few minutes. Add broth and bring to boil. Stir often so pasta doesn't stick. Cook until pasta is soft. You may need to add additional broth or water. Just before serving add parmesan cheese and parsley.

Serving Suggestions:
Dish tastes better after it has been chilled. Serve cold or slightly warm.
