SPINACH OR BROCOLLII BAKE

| Ingredients: |
1 pkg frozen Chopped Spinach or Brocolli
3/4 c ff egg-substitute
1 cup skim milk
4 oz Velveeta Lite
|
4 slices Wonder Light Italian bread (cubed, crusts removed)
1/8 c chopped green onion
|

| Cooking Instructions: |

Thaw spinach and wring out excess moisture. Heat milk until cheese will melt in it. Mix all ingredients in 9 in round cake pan. Bake at 350 15 minutes covered, then 15 minutes uncovered, until top is lightly browned and the center tests done.

This is great served hot or even cold for Brunch! For dinner I serve this with 2 slices crisp turkey bacon and a tomato-cucumber salad marinated in ff Italian dressing.
