OLD FASHIONED POTATO SALAD

Ingredients:
4 cups frozen hash browns
1 tbl salt
1 quart boiling water
1/4 cup non fat Mayo
1/4 cup non fat sour cream
1 tsp salt
1/2 tsp pepper
2 tbl sweet pickle juice
2 tbl mustard
1/2 cup diced celery
1/2 cup sweet pickles, diced
1/2 cup red onion, diced
1 cup scrambled egg substitute.
Cooking Instructions:
Cook potatoes in boiling water with 1 tbl salt. Cover and cook until tender, about 10-12 minutes. Drain. In a small skillet sprayed with non stick cooking spray, scramble the egg substitute until cooked through. Combine all ingredients to warm potatoes and toss lightly. Chill for 2 hours before serving.

Serving Suggestions:
NOTE: You can cut the soduim in take by not cooking the potatoes in salt.
