Caribbean Taco Salad

Ingredients:
4 each fat-free flour tortillas -- 8 to 10 inch
Cooking Spray
20 ounces Lean Ground Turkey
1Package (1.25 OZ)Taco Seasoning mix
2 Tablespoons Water
2 cups Mango, chopped
1/4 Cup Red pepper, chopped
3 tablespoons green olives, chopped
3Tablespoons Cilantro, Fresh Chopped
1 Tablespoon Brown Sugar
1 Teaspoon lime rind, Grated
2 Cups Spinach Leaves
Cooking Instructions:
Heat Oven to 425. Invert 4 10 oz Custard Cups onto a cookie sheet. Spray Outside of cups with Cooking Spray. Spray one side of the tortillas with Cooking Spray. Place over the cups Sprayed side up. Bake for 4 to 6 minutes until browned. In a skillet brown the turkey until cooked through. Add the taco Seasoning and water. Cook for about 5 minutes. To make the Salsa. Stir in the Mango, and the next 5 ingredients. Sti well. Place Taco shells on Plates. Divide the Spinach Leaves among the 4 Shells. Top with Cooked turkey and Salsa.
