Preheat oven to 325 degrees
Flatten boneless chicken breast using wax paper and rolling pin or side of chef's knife.
Place one piece of ham on each chicken breast. If using optional cheese, also place cheese on each breast. Starting at short end, roll chicken breast around ham. Secure with toothpicks.
Brown chicken roll-up in olive oil until browned. Place in preheated oven and bake for 30 minutes. Pour cream of chicken soup over roll-ups. Return to oven for 15 minutes or until chicken is tender.
This is delicious served with rice and broccoli. I have used both regular ham or the ham slices that come in the packages. If using those slices, several slices need to be used with each roll-up. This was one of my first "company" dishes when first married 30 years ago. It is still a favorite.
