Delectable Chicken Dinner

| Ingredients: |
4 Chicken Cutlets (each should be the size of your palm)
1 cup of cooked brown rice or white if you prefer
(brown is better for
you)
1-1/2 cup of carrots cut into matchsticks
|
Low Sodium Soy Sauce (to taste)
Olive Oil
Grated fresh ginger (or dry kind)
Garlic Powder
4 pieces of Aluminum Foil about 8"x 8"

| Cooking Instructions: |
|
Preheat oven to 350 Degrees
Lay out each piece of foil
Lightly brush the center of foil with olive oil to prevent sticking
Place a 1/4 cup of rice in center of each foil
dash of soy, ginger,garlic on each
Place equal amounts of carrots on each
Place chicken on top of carrots
season with dash of soy, ginger,garlic
Fold up the foil into the middle of the pack to make an envelope.
Bake for about 1 hour, serve on plate right in the foil
