West Indian Chicken

| Ingredients: |
4x6 ozs chicken pieces
1 teaspoon curry powder
1 teaspoon ground ginger
|
1x8 oz can pineapple chunks
1 green pepper, deseeded and chopped

| Cooking Instructions: |

Score flesh of chicken pieces. Mix the curry powder and ginger together, and rub into flesh of chicken. place the chicken in a shallow dish, pour over the pineapple juice from can, and marinade for 2 hours. Put chicken under a hot grill for 20 minutes until tender, turning frquently and using marinade to baste.
Put the pineapple chunks in a blender with remaining marinade and chopped pepper, liquidize until smooth. Pour puree into a pan and heat through.
Place grilled chicken onto plates, and pour sauce over.
