PESTO PASTA WITH CHUNKY TOMATO SAUCE

| Ingredients: |
One pound of spaghetti( high fiber content)
2 cloves of fresh minced garlic
1 pkg. of Knorr Pesto Sauce mix
1 10-12 oz can of Italian spiced/diced tomato
(Contadina, Red pack, DelMonte)

1/4 cup Olive Oil
1/2 cup of Water
1/2 cup low fat chicken broth
dash of oregano, dried parsley and crushed red pepper

| Cooking Instructions: |
|
Cook noodles according to pkg. directions.
In medium sauce pan, prepare Knorr mix as directed,
adding all other ingredients at the very beginning.
Simmer sauce mixture for 20-25 minutes.
Place pasta in serving bowl and cover with sauce mixture.
Toss and serve with grated cheese if desired.
Makes four GENEROUS servings.
