Grilled Shrimp with Feta and tomatoes

Ingredients:
Vinaigrette:
2 Tablespoons red wine vinegar
2 Teaspoons Dijon mustard
lemon zest -- finely grated
Pepper to tatste
3 Tablespoons Olive Oil
3 Pounds large shrimp -- peeled and deveined
Lemon zest and Juice from large lemon
1/4 Cup Olive Oil
2 Teaspoons Dried Oregano
Pepper to taste
1 Head radicchio -- large
2 Pounds tomatoes -- cut into 8 pieces
8 Ounces Feta cheese -- Cubed
1/2 Cup mint leaves
Cooking Instructions:
Mix all the Vinaigrette ingreients in a bowl. Set aside
Toss the shrimp, lemon zest and jusice, olive oil, oregano and pepper in a bowl Let rest 15 minutes. Prepare the grill. Thread the shrimp on 12 Skewers. Grill over high heat until cooked through. Trim the tough with bottom form the radicchio leaf. Add to the shrimp with the cheese, tomatoes and mint. Serve.
