Ingredients:
1/2 Cup White Corn
1 Cup black beans, Drained and rinsed
1 Each Tomato, Chopped and seeded
1/4 Cup Red Onion, chopped
3 Ounces Cooked Chicken, cubed
6 OZ Shredded Reduced Fat Cheese
4 La Tortilla WHole Wheat Tortillas
Cooking Instructions:
Mix the first 5 Ingredient in a sauce pan and cook until heated through. Spray 1 side of the tortilla with Cooking Spray, Add to a large skillet with the sprayed side down. Add the cheese to 1 side of the tortilla. Add the Mixutre on top. Cook until the cheese melts. Fold over and remove to a plate. Do the other 3 the same way. Serve.
