Ingredients:
low fat vanilla wafers or low fat graham crackers(crushed)
2 (8 ounce) fat free packages cream cheese
3/4 cup splenda
2 eggs
1 teaspoon vanilla extract
1 (21 ounce) can low fat cherry pie filling
Cooking Instructions:
Preheat oven to 350 degrees F (175 degrees C). Line muffin tins with paper liners. Place 1 vanilla wafer in bottom of each paper cup or about 2 teaspoons of crushed graham cracker. In a mixing bowl, beat cream cheese(should be room temperature), sugar, eggs and vanilla until smooth and light. Fill each muffin liner with this mixture, almost to the top. Baking time differs usually about 20-25 minutes. Cool. Top with a spoonful of cherry pie filling.
