Chipotle Deviled Eggs

Ingredients:
10 large Eggs
1 cup finely minced Onion
1 oz. finely minced Prosciutto OR other flavorful Ham
1 tbs. Dijon Mustard
2 tbs. reduced-fat Mayonnaise
1/4 tsp. Chipotle Pepper Powder
1/4 tsp. freshly ground Pepper
1/4 tsp. Salt
Cooking Instructions:
Hard boil the eggs and let cool before peeling them. Slice the eggs in half lengthwise and carefully remove the yolks. 2) In a small bowl, use a fork to blend the yolks and remaining ingredients together. If mixture seems dry, add a bit more mayonnaise. Fill each egg half with this mixture. When the eggs are finished, sprinkle with a bit of extra chipotle pepper.
