PUMPKIN-CRANBERRY BREAD

Ingredients:
3 cups King Arthur 100% white whole wheat flour
1 T. plus 2 tsp. pumpkin pie spice
2 tsp. baking soda
1 1/2 tsp. salt
3 cups Splenda
Combine above in large bowl until well blended
1 15 oz. can 100% pumpkin
8 oz. egg beaters
1 cup Musselman Apple Sauce with Splenda
1/2 c. water
Stir above 4 ingredients to blend and then mix into flour mix just to moisten
Fold in:
1 cup fresh cranberries
and then spoon mixture into 2 prepared pans.
Cooking Instructions:
Preheat oven to 350% - grease and flour two 9 x 5 pans. Bake 60 to 65 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes. Remove and place loaves on rack to cool completely.
