Truly Scrumptious Lemon-Poppy Seed Muffins

| Ingredients: |
Dry ingredients:
2c flour
1/2 c granulated fructose
1 tbsp poppy-seeds
2 tsp baking powder
1/4 tsp salt

Wet ingredients:
3/4c buttermilk
1/2c unsweetened applesauce
grated rind and juice of 1 lemon
1 large egg beaten
Glaze:
2 tbsp honey
2 tbsp powdered sugar
2 tbsp lemon juice

| Cooking Instructions: |
1. Combine dry ingredients in one bowl and wet ingredients in another bowl.
2. Add the wet ingredients to the dry and mix until just blended.
3. Divide between 12 muffin cups and bake at 350 degrees for 20mins approx.
4. Combine glaze ingredients and sprinkle over the top of the muffins.
These are better cold but can be eaten warm
