Oatmeal Pumpkin Bread

Ingredients:
1 c. oatmeal, uncooked
1 1/4 c. skim soy milk, room temperature
3/4 c. pumpkin puree
4 egg whites or 1 Tbs. Egg Replacer mixed in 2 Tbs. water
2 Tbs. corn Syrup
1/2 c. sugar
2 Tbs. applesauce
2 c. whole wheat flour
1 Tbs. baking powder
1/4 tsp. salt (optional)
1 tsp. cinnamon
1/4 tsp. nutmeg
1/2 c. golden raisins
Cooking Instructions:
Heat oven to 350 degrees. Spray a 9x5 inch loaf pan with nonstick spray. In a bowl, mix oatmeal and milk. Let sit a few minutes. Beat in next 5 ingredients. In a medium bowl, mix flour, baking powder, salt and spices. Stir in pumpkin mixture until well combined. Stir in raisins. Pour into prepared loaf pan, bake 55 to 60 minutes or until a toothpick comes out clean. Let cool 20 minutes before removing from pan. Preparation Time: 20 minutes Baking Time: 1 hour
