PIZZA WITH THE WORKS

1 Onion, thinly sliced
1 1/2 Teaspoons Oil
1 Red Pepper, cut into thin strips
1 (8 OZ) Package Sliced Mushrooms

1 Cup Frozen Soy Crumbles
1 Teaspoon Minced Chipotle in Adobo Sauce
1 Thin Crust Prebaked Pizza Crust
1 Tomato, diced
1/2 Cup Reduced Fat Pepper Jack Cheese, shredded

Preheat oven to 425°. In a skillet over medium heat, add the oil and cook the onion until translucent. Add the next 2 ingredients and cook for 5 minutes. Stir in the soy crumbles, chipotle and 2 tablespoons water. Heat through. Place on top of the crust. Add the tomatoes and cheese. Bake for 15 minutes. Serve.
